You can do business or trade items with many of them while others might give you important information to further proceed on your quest

QuestA quest is a journey towards a goal. The objects of quests require great exertion on the part of the hero, and the overcoming of many obstacles, typically including much travel, which also allows the storyteller to showcase exotic locations and cultures.
